Gofio is roasted cereal flour (wheat, barley, corn or blend), finely ground. A staple Canarian food: breakfast, soup, dessert, hiking ration. You can find it in all supermarkets on the island.
The Guanches were already roasting grains before the conquest. Traces of roasted cereals date back to around 200 BC in Tenerife. Gofio Canario is protected by Protected Geographical Indication (PGI). Common brands: El Molino, Silbo, Gofio Anaga.
- Breakfast: gofio + hot milk
- Escaldón: gofio beaten in fish or meat broth
- Pelotas: small balls, often with honey
- Hiking: sachet + water
The trigo y millo blend (wheat and corn) is the most versatile to start with.
